Years ago, I would have told you that homemade pizza wasn’t worth the effort. I thought you needed a fancy pizza stone, a wood fired oven, or a magic wand to prevent a soggy crust. After some experimenting and a very neat cooking class in Italy, though, I’m so happy to tell you that I was wrong! This BBQ Chicken Pizza comes out with a beautifully crisp crust, never a soggy bite in the center. You can make this tangy, fun dinner perfectly the first time with these easy tips!

Barbecue Chicken Pizza Ingredients
- Pizza Dough and Cornmeal – I used Wholly Wholesome gluten-free pizza dough, but you can use your favorite brand (or even a homemade recipe). The cornmeal prevents your dough from sticking and helps the crust crisp up nicely.
- Olive Oil and Barbecue Sauce – Any neutral oil will work; this prevents the sauce from soaking into the dough and making the crust soggy. Use your favorite BBQ sauce (we used G. Hughes sugar-free).
- Toppings: Cooked Chicken, Mozzarella, Diced Red Onion, Pepperoncini Peppers, and Fresh Cilantro.
How to Make Homemade BBQ Chicken Pizza
This pizza recipe is simple, but you will need a baking sheet, parchment paper, and a brush or spoon.



- Prep your dough. While the oven preheats (425 degrees F), line a baking sheet with parchment paper. Sprinkle a light dusting of cornmeal on the parchment paper, then stretch your dough into a 12-inch circle on the cornmeal. Brush the top of the dough with oil.
- Add sauce & toppings. Spread your BBQ sauce evenly over the dough, leaving an inch around the edges clean for your crust. Sprinkle the chicken, mozzarella, red onion, and chopped pepperoncini peppers on top.
- Bake the pizza. Bake for 20-25 minutes or until the crust is fully cooked and crispy enough for your preferences. Sprinkle with fresh cilantro, slice, and serve.

Storage and Reheating
- Fridge: Cool and store in airtight container up to 3-4 days.
- Freezer: Cool, wrap individual slices in plastic wrap, then store in freezer bag up to 3 months.
- Reheat: Bake at 350 degrees for 5-10 minutes or air fry at 350 for 2-4 minutes.
How to Prep Homemade Frozen Pizzas
Forget the cost of frozen pizzas and make your own! You can partially bake the crust, add toppings, and freeze for 2-3 months. When ready to enjoy, bake from frozen (add a few minutes to baking time).
- Prep crust exactly as above, then bake at 450 degrees F for 4-5 minutes. Crust should appear a bit puffy, dry, and not browned at all. Let this cool.
- Add sauce and toppings however you like them.
- Cover with multiple layers of plastic wrap to protect from freezer burn, then store in an extra-large freezer bag if possible. If you don’t have a bag that fits, adding a layer of aluminum foil can help protect it.

Equipment

Ingredients
- Cornmeal, for sprinkling
- 1 lb pizza dough, I used Wholly Wholesome Gluten-Free dough
- 1 tbsp olive oil
- 1 cup BBQ sauce
- 1.5 cups cooked chicken, shredded or chopped
- 1.5 cups mozzarella, shredded
- ¼ cup red onion, small diced
- ¼ cup pepperoncini peppers, chopped
- ¼ cup cilantro, chopped
Instructions
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper and sprinkle a light dusting of cornmeal on it.
- Stretch your pizza dough into a 12-inch circle on the lined baking sheet. Brush with olive oil, making sure to get the edges and crust area as well.
- Spread your BBQ sauce evenly over the dough, leaving about 1 inch around the edges for your crust. Top the sauce with the chicken, red onion, and peppers.
- Bake for 20-25 minutes. Once the crust is golden and crisped to your liking, remove it from the oven.
- Sprinkle the fresh cilantro over the pizza, slice, and serve.
