Ingredients
Here is a quick overview of what you will need. Scroll to the printable recipe card for exact measurements and nutrition facts.
- Mini seedless watermelon and Pineapple – I used half of each of these. You don’t want these to be overly ripe or they soften a little too much.
- Blueberries and Strawberries – Strawberries should be sliced. Add blackberries or raspberries if you like.
- Honey, Vanilla extract, and Lime juice – These combine for a sweet and tangy dressing! To make this vegan, replace the honey with maple syrup.
- Mint leaves – Finely chop and mix in to brighten the flavor in every bite. Keep some sprigs whole for garnish.
How to make a grilled fruit salad
This is a simple cookout recipe perfect for spring or summer! All you need is a grill (any kind will work) and a mixing bowl. Here is a step-by-step guide.
Grill pineapple and watermelon
Preheat your grill to medium-high heat, about 450 degrees. Slice the watermelon into wedges and pineapple into rounds, then place them on the grill. Grill for 5 minutes (you should see light grill marks), then flip and grill for another 4-5 minutes or until fruit is charred. Remove from grill and set aside to cool.
Make sweet dressing
Meanwhile, whisk together in a small bowl the honey, vanilla extract, and lime juice. This can be made ahead of time and stored in an airtight container in the fridge if you like to whip up easy fruit salads all summer long!
Assemble fruit salad
Once cooled, chop all grilled fruit into small pieces and place in a large bowl along with the fresh blueberries and sliced strawberries. Drizzle the honey mixture over and toss to combine. Add the mint leaves and toss again. Serve!
What to serve with fruit salad
This is a lovely snack for brunch with French Toast or a Spring Salad. It’s also the perfect appetizer for a barbecue with Grilled Pork Tenderloin or Shrimp Kabobs, maybe with Keto Jalapeno Poppers on the side and a Creamy Lemon Cheesecake for dessert!
Because this is only good for two days, you will want to use up any leftovers quickly. It’s an amazing topping for Chia Pudding, and you could always add some Homemade Granola for some crunch.
Storage instructions
Place fruit salad in an airtight container and refrigerate up to two days. The sooner you eat it, the better the texture will be. I do not recommend freezing this as the texture breaks down quickly.
Fruit Salad FAQs
Stone fruit (peaches, plums, nectarines, even cherries) and tropical fruits (mango, dragon fruit, or bananas) hold up well to grilling. The heat and soft caramelization brings out a wonderfully smoky sweetness! For even more smoky flavor, grill your lime before juicing it and including it in the dressing. Grilled citrus is amazing!
Yes, to a point. Grilling the pineapple and watermelon does cause the fibers to break down quicker, so you do need to consume this within two days. I prefer it fresh.
While I didn’t have this issue, some grills benefit from being greased before using. If food tends to stick on your grill, brush with olive oil or avocado oil before placing your fruit on it.
If your fruit is super sweet, you may want to balance out the flavor with a sprinkle of flaky salt. If you want more citrus flavor, zest your lime and mix it into the dressing. For a savory-sweet combination, place arugula on a platter, top with the fruit salad, then add crumbled feta cheese on top. If you like a crunch, sprinkle with crushed or slivered almonds. Instead of lime juice and mint, try with lemon juice and fresh basil.
