Is Chia Pudding Good For You?

Chia Seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, full of fiber, iron, calcium, manganese, and phosphorus. These seeds may be small but they are mighty! They will keep you fuller longer, help regulate your blood sugar and even provide a great source of protein.

Plus, they make a killer pudding! Blueberries and raspberries are also full of vitamins and antioxidants, so this really is a great healthy snack!

What do I need to Make Chia Pudding?

  • Chia Seeds
  • Liquid of choice: water, milk (dairy, nut, coconut or oat)
  • Sweetener (maple syrup, honey, swerve, coconut sugar, agave, monk fruit, stevia, brown sugar)
  • Vanilla Extract

How do I make Chia Pudding?

For this Lemon Raspberry Chia Pudding and Lemon Blueberry Chia Pudding, you’ll start by mixing up a can of coconut milk. Stir it together with a spoon or blender until the coconut cream and water are combined. Then, combine your coconut milk, chia seeds, swerve, lemon juice, lemon zest, and vanilla extract all together and let it sit for 2-4 hours or overnight.

If your pudding is not thick enough when you are ready to eat, just stir it up and let it sit a bit longer. If your pudding is too thick you can thin it out with a little bit of milk or water and stir it up.

When you are ready to eat just stir in the berry of your choice, or layer it like I did, and enjoy!

How long does Chia Pudding last in the fridge?

If stored in an air tight container in the fridge chia pudding will last 5 days. Keep in mind it does absorb liquid the longer it sets, so you will likely need to stir in a little extra liquid. The relatively long storage life of chia pudding makes this a great meal prep option!

Jars for Chia Seed Pudding

You can make chia seed pudding in any jar, bowl or container you desire. I really love to make these in single serving size jars as pictured because you they are easy to grab and go. Ingredients 

  • 1 cup full-fat coconut milk, canned
  • 3 tbsp chia seeds
  • 2 tbsp sweetener, (Monkfruit or Swerve if keto)
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 4 tbsp raspberries, fresh or frozen

Instructions 

  • Mix together coconut milk, chia seeds, swerve, vanilla extract, lemon juice & zest
  • Set aside in the refrigerator and let it sit for 2-4 hours or overnight
  • When ready to serve, fold in raspberries or layer (as pictured)

Notes

  • Can use 1/2 cup of almond milk and 1/2 cup of coconut milk
  • If the mixture is too thick, it can be thinned out with a few tbsp of milk until it is your preferred texture
  • Use coconut sugar as 1:1 replacement for swerve if paleo
  • Maple syrup or honey can be used as a 1:1 replacement for swerve
  • Each serving has 5.1 net carbs.
