Easy Grilled Fruit Salad

- ½ mini seedless watermelon cut into wedges
- ½ pineapple sliced into rings
- ¼ cup honey
- 1 tsp vanilla extract
- 1 tsp lime juice
- 1 cup blueberries
- 1 cup strawberries sliced
- ¼ cup fresh mint leaves minced
Preheat your grill to medium-high heat, about 450 degrees.
Slice the watermelon and pineapple and place on the grill. Grill for 5 minutes, then flip and grill for another 4-5 minutes or until fruit is charred. Remove from grill and set aside to cool.
Meanwhile, stir together in a small bowl the honey, vanilla extract, and lime juice.
Once cooled, chop all grilled fruit into small pieces and place in a large bowl along with the fresh blueberries and sliced strawberries. Add the honey mixture and toss to combine.
Add the mint leaves and toss again. Serve!
- This is a sweet and fresh fruit salad that can be doubled for a bigger crowd!
- Store the leftovers in the fridge for up to 2 days. The pineapple and watermelon start breaking down after that. This is definitely best served fresh!
