Easy Grilled Fruit Salad

Ingredients

  • ½ mini seedless watermelon cut into wedges
  • ½ pineapple sliced into rings
  • ¼ cup honey
  • 1 tsp vanilla extract
  • 1 tsp lime juice
  • 1 cup blueberries
  • 1 cup strawberries sliced
  • ¼ cup fresh mint leaves minced

Instructions

  • Preheat your grill to medium-high heat, about 450 degrees.
  • Slice the watermelon and pineapple and place on the grill. Grill for 5 minutes, then flip and grill for another 4-5 minutes or until fruit is charred. Remove from grill and set aside to cool.
  • Meanwhile, stir together in a small bowl the honey, vanilla extract, and lime juice.
  • Once cooled, chop all grilled fruit into small pieces and place in a large bowl along with the fresh blueberries and sliced strawberries. Add the honey mixture and toss to combine.
  • Add the mint leaves and toss again. Serve!

Notes

  • This is a sweet and fresh fruit salad that can be doubled for a bigger crowd!
  • Store the leftovers in the fridge for up to 2 days. The pineapple and watermelon start breaking down after that. This is definitely best served fresh!
