Ingredients for Hamburger Potato Soup

Here is a quick overview of what you will need. Scroll to the printable recipe card below for exact measurements.

  • Ground Meat – I used ground beef, but you could use ground turkey, bison, sirloin, or venison to reduce the fat content. Consider a mixture for really interesting flavor.
  • Vegetables – I diced up yellow onion, carrot, yellow bell pepper, and russet potatoes. You could mix and match other vegetables like mushrooms or celery (sauté with mushrooms & peppers) or canned green beans (toss in with the broth). For a lower carb count, you could swap the potatoes with turnips.
  • Beef Broth and Worcestershire Sauce – These add liquid volume and fantastic flavor.
  • Seasonings – I used hamburger seasoning, garlic powder, onion powder, and paprika. Feel free to use your favorite all-purpose seasoning blend.
  • Cream Cheese and Shredded Cheese – For the creamiest soup, use softened full-fat cream cheese and cheese shredded manually. I used cheddar cheese, but pepper jack, Swiss, or others would be delicious, too.

How to Make Super Cheesy Hamburger Potato Soup

This easy one-pot soup is decadent and comforting, and you only need one pot with a lid for it! Here’s a step-by-step guide to making this easy comfort food.

Brown beef & Sauté Veggies

Grab your Dutch oven or large pot and warm it on the stove over medium heat. Add in your ground beef and cook it until browned. While it cooks, mash it up with your spatula or wooden spoon so it’s crumbled and easy to eat.

Once the meat is browned, add in your chopped onions, bell pepper, and carrots. Sauté these for 3-4 minutes or until softened.

Cook and Make it Creamy

Once the veggies have softened, add in your Worcestershire sauce, hamburger seasoning, garlic powder, onion powder, and paprika. Mix well. Finally, add in your diced potatoes and broth. Bring this mixture to a boil, then reduce the heat to a simmer. Cover with a lid and cook for 15-20 minutes or until potatoes are tender.

When potatoes are fork tender, stir in your softened cream cheese and shredded cheddar cheese. Continue stirring until completely melted and smooth. Taste and adjust seasonings as needed.

What to Serve with Hamburger Potato Soup

We like to garnish this with extra cheese, some crispy bacon, chopped scallions, or fresh herbs. It’s a complete meal on its own, so serve it by itself, with some crusty bread, or a side salad for a simple meal. If you need to stretch it to feed more, consider simple, wholesome sides like Air Fryer Vegetables, these Jalapeno Poppers, or some Roasted Asparagus.

Storage and Reheating

Place leftovers in an airtight container in the fridge and enjoy within 3-4 days. You’ll get the nicest texture by reheating low and slow in a pot on the stove, but you could also microwave individual portions (50%, stir every 45 seconds or so).

How Can I Freeze Creamy Soups?

Often soups with cream cheese or melted shredded cheese can thaw into a gritty, separated mess. You can avoid this with one simple trick! Go through each step of this recipe, but STOP after the potatoes have simmered for 15-20 minutes. Instead of adding the cream cheese and shredded cheese, allow the soup to cool and transfer it to a freezer bag or some soup cubes.

When you are ready to serve this, allow it to thaw overnight in the fridge, then warm on the stove over medium low heat. Stir in the cream cheese and shredded cheese, allowing them to melt as the soup warms up.
