  • 1 pound ground beef
  • 1 cup yellow onion thinly diced
  • 3/4 cup carrot thinly diced
  • 1 small yellow bell pepper seeded and thinly diced
  • 4 medium size russet potatoes cut into small cubes
  • 32 ounces beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons hamburger seasoning or your favorite all-purpose seasoning blend
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 8 ounces cream cheese softened
  • 1 1/2 cups shredded cheddar cheese

Instructions

  • Warm a Dutch oven or large pot over medium heat, then cook the ground beef until browned. Break it apart with a spatula as it cooks, then drain any excess grease.
  • Pour in your diced onion, carrots, and bell pepper to the pot with the beef. Cook for 3-4 minutes until softened.
  • Add in the Worcestershire sauce, hamburger seasoning, garlic powder, onion powder, and paprika, then stir to make sure everything is well mixed.
  • Toss in the diced potatoes and pour in your beef broth Let it come to a boil, then reduce heat to a simmer. Cover with lid and cook for 15-20 minutes or until the potatoes are tender.
  • Stir in the cream cheese and cheddar cheese until smooth and completely melted. Taste and adjust seasonings as you like.
  • Serve hot, garnished with shredded cheese, crispy bacon, or fresh herbs if desired. Enjoy!
