What are chaffles?
Chaffles are a great keto snack no matter the time of day. These Jalapeño Cheddar Chaffles are made with very few ingredients, can be customized for your preferences, and are easy to freeze and reheat. They can be enjoyed plain or used as a keto bread substitute!
Chaffles are low in carbs and high in fat, making them perfect for the keto diet. All you have to do is mix up the batter, pour it in a preheated waffle iron, and take it out when there’s no more steam coming out. It won’t be crispy at first, but let it sit for 1-2 minutes, and it’ll crisp right up.

Cheese Chaffle Ingredients
Here’s a quick rundown of what you’ll need for these Jalapeno Cheddar Chaffles. For specific measurements and instructions, scroll down to the printable recipe card.
- Eggs: you will need size large eggs for this recipe.
- Cheddar cheese: Shredded cheddar cheese is needed, but you can sub another variety if you prefer.
- Almond flour and Baking powder
- Jalapeños: canned or freshly chopped and seeded peppers.
How to make Jalapeno Cheddar Chaffles
This is so easy! Just like a normal waffle, you only mix up your batter and pour it into the waffle iron! In a medium-sized bowl, mix your eggs, cheese, almond flour, baking powder, and jalapenos. Preheat your waffle maker and spray with oil so that nothing sticks.
Once the mixture is smooth and the waffle maker is hot, you’re ready to go. Pour in the batter, filling the iron about 3/4ths full. It’s important to not overfill as the batter will just pour out, making a huge mess!
Allow the batter to cook 2-3 minutes–When there’s no longer steam coming from the waffle iron, it’s probably ready. Take it out and allow it to cool for 1-2 minutes so it’ll crisp up.
How to make chaffles extra crispy
While chaffles aren’t super crispy right out of the maker, they do crisp up as you let them sit and cool. If you prefer them SUPER crispy, you can do that with a small change. Before pouring batter into the waffle maker, sprinkle shredded cheese on the bottom iron of the waffle maker, then pour in your batter, and finally sprinkle a bit more cheese on top. The cheese gets super crispy, leaving the outer layer crunchy and the inside soft and fluffy.
How to store & reheat chaffles
Chaffles can be stored in the fridge up to 4 days in an air-tight container. If you’d like to freeze them (great for meal prepping large batches), either store them in a bag with parchment paper between each waffle OR freeze for 1 hour on a baking sheet, then transfer to a freezer bag. Frozen chaffles are best within two months but can be kept up to 6 months.
To reheat, you can do this in a variety of ways. Microwaving them makes them quite soggy, but is the quickest. The air fryer (350 degrees, about 3 minutes) results in super crispy chaffles. Reheating in the oven (350 degrees, 4-6 minutes) allows you to reheat large quantities at once and ends up with decently crispy chaffles.

Jalapeño Cheddar Chaffles
Ingredients
- 3 large eggs
- 1 cup shredded cheese, any variety or mixture
- 1/4 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 cup chopped and seeded jalapeño, fresh or canned
Instructions
- Combine the eggs, shredded cheese, almond flour and baking powder in a small bowl and mix well.
- Preheat a waffle maker according to the directions and lightly spray with cooking oil if needed.
- Spoon the batter into the waffle maker and cook 2-3 minutes until steam is no longer coming from the machine.
