Homemade Breakfast Sausage Recipe

Breakfast sausage is a staple in this house! It is one of my favorite ways to start the day, along with this Keto Spinach and Bacon Egg Muffins and this Mocha Chia Pudding. And because no breakfast is complete without coffee, don’t miss out on this Cinnamon Frappucinno that only has 2.4 net carbs!

Most breakfast sausage has maple syrup or other sweeteners in it that makes it off-limits for people with various diets. No worries though, friends! This breakfast sausage is super easy to make and if you don’t need the whole pound of sausage you can either freeze some patties for a later date or half the recipe and only make what you need. Grab and go breakfast is pretty much the only type of breakfast I eat. It’s a busy time of the day! Can you blame me? I adore chia pudding but after a few days, I need a savory breakfast which is when I whip up some of these sausage patties and some Keto Cheddar Garlic Biscuits or I make some Egg Muffins and add the sausage write in them for a grab and go omelet!

Ingredients for Homemade Breakfast Sausage

To make this breakfast sausage recipe you only need your meat, handful of spices, and some fat to give the sausage that juicy flavor we all love!

  • Ground pork
  • Bacon grease or lard
  • Fennel seeds
  • Garlic powder
  • Black pepper
  • Marjoram
  • Salt
  • Onion powder
  • Paprika

How to made Homemade Breakfast Sausage

First, you’ll melt your lard, bacon grease or whatever source of fat you are using. Then you’ll add your pork, spices and bacon grease in a bowl together and use your hands to combine all the ingredients. In my experience, using your hands to evenly mix the spices into the meat is much easier than using a utensil.

Once your meat and spices are well combined, pat your sausage out into 8 breakfast patties or use as you wish. If you want to freeze any patties to use later, line a baking sheet with parchment paper and line your patties on the paper. Put your baking sheet into the freezer for a few hours, until patties have frozen. Once they are frozen you can take the patties off the parchment paper and toss them into a bag to be stored in the freezer.

When you are ready to cook your sausage patty heat a skillet over medium heat and spray with oil. Cook each side for 3-4 minutes or until brown.

Is sausage keto?

Absolutely! Sausage is naturally very low in carbs and this delicious breakfast sausage has zero grams of net carbs!

Ingredients 

  • 1 lb ground pork
  • 2 tbsp bacon grease or lard
  • 1 tsp fennel seeds
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tsp marjoram
  • 1 tsp salt
  • ½ tsp onion powder
  • ¼ tsp paprika

Instructions 

  • Combine all ingredients together with your hands until spices are evenly distributed
  • Divide the mixture into eights and shape each section into a patty
  • Heat skillet to medium heat and spray with oil
  • Fry sausage 3-4 minutes on each side until completely cooked and brown
