Zucchini Boats

I love zucchini boats all year round but they seem extra delicious in the summer when farmer’s markets are covered up with fresh squash! These zucchini boats are super simple to put together. They have less than 10 ingredients and cook up in about 30 minutes!

Ingredients for Zucchini Boats?

  • Zucchini: look for medium size zucchini that are good for stuffing.
  • Cooked chicken: left over grilled chicken, rotisserie, or shredded chicken.
  • Alfredo sauce: most store bought versions of Alfredo sauce are low carb and keto-friendly, just check the labels.
  • Mozzarella Cheese: shredded mozzarella cheese or an Italian blend of your choice.
  • Italian seasoning: adds great flavor.

How to make Chicken Zucchini Boats?

To make these zucchini boats simply cut your zucchini in half and scoop out the seeds and center until you have a nice boat to fill.

In a mixing bowl combine the cooked chicken, Alfredo sauce, and mozzarella. Spoon the filling into the zucchini boat and top with the remaining cheese and bake until gold and bubbly! Top with parmesan and Italian seasoning if desired!

How to make zucchini boats in the Air Fryer

I love using my Air Fryer and I know I’m not the only one! Here’s how to make these zucchini boats in the air fryer! First, make your zucchini into the boat shape as described above. Then, heat your air fryer to 390 degrees. Place your zucchini in the air fryer and cook until it begins to blister. While that’s cooking, combine your chicken, Alfredo sauce and mozzarella. Remove your zucchini from the air fryer and fill with the chicken mixture. Top with additional mozzarella. Place back into the air fryer and cook until the cheese is melted and the inside is warm. Depending on the size of your air fryer, you may need to do this in batches.

Tips for the best Chicken Alfredo Zucchini Boats

  • Be sure to mix your ingredients well so that every bite is full of flavor!
  • I prefer to hollow out the zucchini with a spoon, but you can also use a melon baller
  • Use ripe zucchini- over or under ripe zucchini will not provide a very good texture

Yes, this zucchini boat recipe is keto friendly and low carb. Just be sure you check the Alfredo sauce. Most readily available Alfredo sauces have 1-2 net carbs per serving. You can also make a homemade version if you prefer just be sure you skip the flour and instead use a sauce that has butter, heavy whipping cream and parmesan.

How to Store and Reheat Chicken Zucchini Boats

To store this recipe, just place in a glass or plastic container with an airtight lid and place in the fridge. These zucchini boats will stay fresh for up to four days. To reheat, you can place in the oven fat 350 for 8-10 minutes, in the air fryer at 350 for 4-6 minutes or in the microwave for about one minute.

Ingredients 

  • 2 medium zucchini, sliced and center removed
  • 3 cups cooked chicken
  • 1 cup low carb Alfredo sauce
  • 1 cup shredded mozzarella cheese, divided
  • 1 teaspoon Italian seasoning

Instructions 

  • Preheat oven to 400ºF
  • Cut zucchini in half and scoop out the center of each half to create boats. Place zucchini boats in a casserole dish.
  • Add the cooked chicken, Alfredo sauce and half of the mozzarella, stir and spoon into the center. Top with the remaining mozzarella cheese.
  • Bake for 20-25 minutes or until zucchini is fork-tender. Sprinkle with Italian seasoning and parmesan cheese if desired.
