Chicken Alfredo Zucchini Boats

Chicken Alfredo Zucchini Boats are an easy weeknight meal! Stuffed zucchini boats filled with chicken, alfredo and cheese. This low carbohydrate, high protein meal will leave you feeling satisfied!

Ingredients

  • 2 medium zucchini sliced and center removed
  • 3 cups cooked chicken
  • 1 cup low carb Alfredo sauce
  • 1 cup shredded mozzarella cheese divided
  • 1 teaspoon Italian seasoning

Instructions

  • Preheat oven to 400ºF
  • Cut zucchini in half and scoop out the center of each half to create boats. Place zucchini boats in a casserole dish.
  • Add the cooked chicken, Alfredo sauce and half of the mozzarella, stir and spoon into the center. Top with the remaining mozzarella cheese.
  • Bake for 20-25 minutes or until zucchini is fork-tender. Sprinkle with Italian seasoning and parmesan cheese if desired.
