Air Fryer Quesadillas
Using my Air Fryer has become a way of life in our house. There is simply no better way to prepare your favorite foods quickly, easily and without heating up your oven! We made Air Fryer Chicken last week and Air Fryer Crab Cakes the week before that! So when we had some leftover chicken and tortillas to use, I knew that cooking up some fresh chicken quesadillas in the air fryer was the way to go!
These Air Fryer Quesadillas are so delicious. By using the air fryer, your tortillas will crisp up perfectly, making them deliciously crunchy. Inside of your tortillas there’s spicy buffalo chicken, melty mozzarella and tangy blue cheese! You couldn’t ask for a better dinner or lunch!
This recipe is going to be a hit in your house. Your pickiest eaters will gobble down their plates and ask for seconds- these chicken quesadillas are irresistible! This recipe was made for weeknight dinners- barely any prep and ready and on the table in under ten minutes. Now let’s get to cooking!

- Chicken- shredded
- Mozzarella and blue cheese
- Buffalo sauce
How to make Quesadilla in Air Fryer
This easy weeknight meal takes only a couple of minutes! First, preheat your air fryer to 370 degrees F. Next, combine your chicken, cheese and buffalo sauce and mix well. Add your mixed ingredients to your tortilla and put in the air fryer. Cook at 370 for 4-5 minutes. Flip and cook for an additional 4-5 minutes and you’re done!
How long to cook Quesadillas in Air Fryer
I cooked my air fryer quesadillas for 4 minutes on one side and 4 minutes on the other, but if you prefer yours to be a little more browned, you could cook for 5 minutes on each side.
Best cheese for quesadillas
I used mozzarella and blue cheese in my chicken quesadilla, but you could use your favorite variety! Pepperjack, meunster, a Mexican blend, cheddar, or colby jack would all be delicious.
What to serve with this buffalo chicken quesadilla
First off, drinks! I enjoyed this easy dinner recipe with a Keto Margarita, but if you enjoy a little more kick, try this Spicy Watermelon Keto Margarita! If you prefer a non-alcoholic drink, try this Sugar Free Lemonade or Sparkling Pineapple Strawberry Punch. Seasoned Black Beans are an easy and nutritious side dish for this Mexican inspired meal. How to Store and Reheat this Air Fryer Quesadilla
To store this chicken quesadilla, just place in a plastic or glass container (or a plastic bag) and keep in the fridge. This quesadilla will stay good for up to three days. To reheat, just pop back into the air fryer for 2 minutes at 350. You can also warm in the microwave.

Air Fryer Quesadilla
Ingredients
- 2 medium-sized tortillas, low carb, gluten free, or regular
- 1 cup shredded chicken
- 1 cup shredded mozzarella cheese
- 1/4 cup blue cheese
- 2 tablespoons buffalo sauce
Instructions
- Preheat air fryer to 370 degrees F.
- In a bowl, combine chicken, both cheeses, and buffalo sauce. Mix well.
- Fill each tortilla with half the chicken cheese mixture and place in the air fryer. Cook for 4-5 minutes, flip, then cook an additional 4-5 minutes.
