Is there anything better than super crunchy, salty, piping hot potato wedges? No way! This is an incredibly easy air fryer side dish that comes together in minutes with basic ingredients you likely already have on hand!
Potato Wedges are traditionally baked until crunchy or deep fried. This version is made in an air fryer. The cook time takes less than half of what it usually takes in an oven! It also requires far less oil than deep frying, making it a lightened up, much healthier option!
What are Potato Wedges?
Potato wedges are somewhat similar to classic french fries. Instead of cutting the potato into thin strips the potato is cut into equal size wedges. Other than the shape and size difference, the crispy exterior and soft, fluffy interior sets potato wedges apart from classic fries.

- Potatoes: Russet potatoes are my favorite potato to use, although any will work. See my notes below regarding other potato options.
- Oil: avocado, coconut, canola, vegetable or extra virgin olive oil will all work in this recipe.
- Corn starch: the secret ingredient!! This helps to dry out the exterior of the potato to make it perfectly crispy every single time.
- Cajun seasoning: any cajun seasoning will do, the spice aisle is full of them! However, you can also use your favorite all purpose seasoning if desired.
How to Make
- Clean the potato well, and pat dry. Slice the potato into wedges and place in a mixing bowl.
- Toss the potatoes in the oil until evenly covered. Add the cornstarch and spices and toss until completely coated.
- Preheat the air fryer for 3 minutes to 390 degrees F. Add the potato wedges in a single layer (this may take multiple batches based on how large your air fryer is). Air fry 7 minutes, toss the basket and fry an additional 7-8 minutes until crispy.
Do I have to peel the potatoes?
No, you can leave the peel on the potatoes if you wish. Personally, I always leave the peel on. If the peel bothers you then absolutely feel free to peel the potatoes.
What Potatoes make the Best Potato Wedges?
Due to the starch and moisture content, Russet Potatoes are a great option for Potato Wedges. They provide a crisp exterior while the inside of the potato gets nice and fluffy. However, you really can use whatever potato you have on hand, including sweet potatoes. Just keep in mind the best texture is going to be with a Russet.
Tips and Tricks for the Best Air Fryer Potato Wedges
- Cut the wedges as uniformly as possible so the cooking time is the same for all wedges.
- Don’t skip the oil! You really don’t need much oil, but it is required to help the seasonings cling to the potato and helps provide a crispy exterior.
- I sprinkle the cornstarch all over the potatoes instead of just dumping it in one spot and mixing. You want the cornstarch to be in a nice thin layer on each potato. This is really the secret to helping the potatoes have that signature crispy layer on the outside.
- Mix up the seasonings! You can use Ranch seasoning, taco, your favorite garlic and herb blend or any other seasoning you wish to mix up the flavors.
- Make it cheesy! Stir in 2 tablespoons grated parmesan when you mix the cornstarch and spices onto the potatoes.
