We have all been exposed to many germs in all our holiday celebrations but now we have big goals to fulfill in the new year so I wanted to pack as much vitamin C as possible into this smoothie but still keep it filling for your day ahead. For this Grapefruit Ginger Smoothie you will need:
Grapefruit: this tropical citrus is full of vitamin C, low in calories, high in nutrients and minerals and even has fiber packed in there. Grapefruit aids in constipation, indigestion and boosts your metabolism. That means if weight loss is one of your goals this year, this smoothie just got even better!
Carrot: Carrots are high in vitamin A, K, & C, B6 as well as biotin and fiber. Vitamin A is essential in preserving your eyesight and aids in immune health. It also supports healthy bone mass and supports your organs for a natural detox process.
Frozen Pineapple: Pineapple is another great source of vitamin C. This fruit is also packed with enzymes and antioxidants that help fight inflammation and disease, aid in digestion health and can even assist in a speedy recovery after surgery!

Medjool dates have a good amount of fiber which is important in digestion health and will also continue to back you in any weight loss goals.
Fresh Ginger: Ginger is the best way to wake your body up in the morning! It aids in nausea, indigestion, upset stomach, menstrual pain, assists in managing blood sugar and controlling cholesterol levels. Ginger is among the healthiest spices in the world due to its powerful antioxidants and anti-inflammatory properties.

This healthy smoothie recipe is made in two simple steps:
- Peel and segment your grapefruit over a bowl. Discard grapefruit skin, seeds, and bitter inner skin.
- Add grapefruit segments, juice, and all other ingredients into a blender and blend until smooth.
How to meal prep smoothies?
Smoothies are definitely meal-prep friendly! You can either make your smoothie the night before and place it in a sealed container in your fridge or you can make it several days ahead and freeze it in a mason jar.
If you are going to freeze your smoothie be sure to leave extra room at the top of the jar so it doesn’t break, and then simply thaw your smoothie in the fridge for a day before you intend on drinking it or leave it sitting in your kitchen sink overnight.
Another option is to package all of your non-liquid smoothie ingredients together in a stasher bag so you can simply empty the bag into your blender, top it with your liquid, and blend!

Ingredients
- 1 cup grapefruit, 1 medium grapefruit
- 1/2 large carrot
- 1/2 cup frozen pineapple
- 1/2 cup greek yogurt
- 3 Medjool dates
- 1-2 teaspoons fresh ginger, peeled
Instructions
- Peel and segment your grapefruit over a bowl. Discard grapefruit skin, seeds, and bitter inner skin.
- Add grapefruit segments, juice, and all other ingredients into a blender
- Blend until smooth. *If you need to add a little bit of liquid to help it blend, you can add water, milk, or juice. This likely isn't needed if you have a high-powdered blender.
