I’m so ready for summer. I’m ready for the warm weather, but mostly I’m looking forward to the bottomless zucchini that summer seems to bring! They’re so versatile, healthy, and tasty!
I love that you can make great sides like Zucchini Fries, and they’re perfect on the grill! I love using them to lower the carb count on my usual favorites like I do with these Keto Zucchini Tortillas.
Most of all, though, I love stuffing them with tasty (usually cheesy) filling and cooking them until they’re nice and tender! That led me to this delicious recipe: Pizza Filling, meet the Zucchini Boat!
Air Fryer Pizza Zucchini Boat Ingredients:

- Zucchini: choose medium to large zucchini, small zucchinis are hard to stuff.
- Italian Sausage: cooked and grease drained
- Marinara (If keto, look for a low-carb option like Rao’s.)
- Parmesan Cheese
- Mozzarella Cheese
How do I make Air Fryer Pizza Zucchini Boats?
- Slice the zucchini length-wise. Then, use a small spoon to remove the center of the zucchini to form a groove, making the zucchini a “boat.”
- Preheat the air fryer to 390 degrees.
- Place the hollowed-out zucchini in the air fryer and cook 3-5 minutes. This will vary based on the size, but cook until the zucchini begins to blister.
- Meanwhile, combine the cooked Italian sausage, marinara sauce, and parmesan cheese in a medium-sized bowl.
- Remove the blistered zucchini from the air fryer. Spoon this mixture into the zucchini boats and top with mozzarella cheese.
- Place the zucchini boats back into the air fryer and cook for another 4 minutes.
Can I make these in the oven?
Yes. While the air fryer is a great time saving option, if you are making a large batch an oven might be a better option.
To cook in the oven preheat the oven to 350 degrees F. Hollow the zucchini and add the filling (you skip the precooking step in the oven method) top with mozzarella cheese and bake 25-30 minutes until the zucchini is tender and the cheese is melted.
What should I serve with Zucchini Boats?
