Thai Chicken Lettuce Wraps

Ingredients

Filling:

  • 1 tbsp sesame oil
  • 1 lb ground chicken
  • 1 yellow onion diced
  • 1 red bell pepper diced
  • ½ cup shredded carrots
  • 4 cloves garlic minced
  • 1 batch peanut sauce (¾ cup)

For serving:

  • 1 head romaine lettuce
  • ½ cup chopped cashews , optional (or peanuts)
  • 1 tbsp sesame seeds , optional
  • Green onions sliced

Instructions

  • Heat the oil in a large skillet over medium heat and add the chicken. Cook until browned, crumbling as it cooks. Add the onion, red bell pepper, carrots, and garlic and saute for 3-4 minutes until the vegetables are softened.
  • Stir in the peanut sauce and heat another minute, until warm and everything is well coated.
  • Spoon the filling into the lettuce leaves, then top with cashews, sesame seeds, and green onions. Serve!

Notes
