- 3 cups cooked rice
- 2 10.5 oz cans of condensed cream of chicken soup be sure to choose a brand labeled gluten free if on a GF diet
- 8 oz sour cream
- ½ cup freshly shredded parmesan cheese
- 1 tbsp poppy seeds
- 1 ½ tsp garlic powder
- 1 tsp onion powder
- ½ tsp dry thyme
- ¼ tsp black pepper
- 4 cups cooked chicken shredded or diced
- 1 ½ cups crushed Ritz crackers about 1 sleeve or choose a gluten free alternative if on a GF diet
- ¼ cup melted butter
Preheat the oven to 350 degrees and grease a 9x13 baking dish.
Spread the cooked rice on the bottom of the dish in an even layer.
In a large bowl, combine the cream of chicken soup, sour cream, parmesan cheese, poppy seeds, garlic powder, onion powder, thyme, and black pepper.
Fold in the chicken so it’s evenly coated, then spread the chicken mixture over the rice.
Mix the crushed Ritz crackers and melted butter in a small bowl to make the cracker topping. Sprinkle over the chicken mixture.
Bake for 25-30 minutes, then serve hot!
- For a slightly healthier recipe, use plain Greek yogurt instead of sour cream and lower sodium cream of chicken soup.
