  • 8 oz sour cream
  • ½ cup freshly shredded parmesan cheese
  • 1 tbsp poppy seeds
  • 1 ½ tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dry thyme

  • ¼ cup melted butter

Instructions

  • Preheat the oven to 350 degrees and grease a 9x13 baking dish.
  • Spread the cooked rice on the bottom of the dish in an even layer.
  • In a large bowl, combine the cream of chicken soup, sour cream, parmesan cheese, poppy seeds, garlic powder, onion powder, thyme, and black pepper.
  • Fold in the chicken so it’s evenly coated, then spread the chicken mixture over the rice.
  • Mix the crushed Ritz crackers and melted butter in a small bowl to make the cracker topping. Sprinkle over the chicken mixture.
  • Bake for 25-30 minutes, then serve hot!

Notes

  1. For a slightly healthier recipe, use plain Greek yogurt instead of sour cream and lower sodium cream of chicken soup.

  2. This recipe is a complete meal all in one! It’s filling and so creamy, too!
