Apple Cinnamon Baked Oatmeal

Oatmeal Base
- 1 ½ cups almond milk
- ½ cup apple butter
- ½ cup maple syrup
- 2 cups rolled oats
- 1 ½ apples cored and cut until ¼ inch cubes (I used Honeycrisp)
- 2 tsp apple pie spice
- 1 tsp cinnamon
- ½ tsp salt
Crumble Topping
- 1 cup chopped pecans
- ½ apple cored and cut into ¼ inch cubes
- ¼ cup apple butter
- 2 tbsp unsalted butter melted
- 2 tbsp maple syrup
- ½ tsp cinnamon
Preheat oven to 350 degrees and grease a 9x13 baking dish.
In a mixing bowl, whisk together the almond milk, ½ cup apple butter, and ½ cup maple syrup until well combined.
Fold in the rolled oats, 1 ½ cubed apple, 2 tsp apple pie spice, 1 tsp cinnamon and ½ tsp salt. Pour the mixture into the greased baking dish and set aside.
Make the topping. Toss together the pecans, remaining chopped apple, ¼ cup apple butter, melted butter, maple syrup, and cinnamon. Spread the topping evenly over the oats.
Bake in the preheated oven for 25-30 minutes, then allow to cool for about 10 minutes. Slice and serve!
- This recipe keeps in the fridge for up to 4-5 days.
- Think of this recipe as baked oats meets apple crisp. So much fall flavor!
- You can substitute pumpkin pie spice for the apple pie spice. It tastes great either way!
- Any red apples work in this recipe, but the best would be Honeycrisp, Gala, or Fuji.
