Ingredients
  

  • 3 cups chopped potatoes I love Baby Dutch Red Potatoes in this recipe but Russet, Gold Yukon or Idaho will also work
  • 1 tablespoon olive oil
  • 1 tablespoon cajun seasoning*
  • 1/2 tablespoon mixed herbs I used rosemary and thyme

Instructions
 

  • Preheat the air fryer to 400 degrees F. for 3 minutes.
  • In a mixing bowl combine the chopped potatoes, oil, seasoning and herbs. When the potatoes are coated well add to the preheated air fryer basket, cook 10 minutes in a single layer.
  • After 10 minutes shake the basket well and cook an additional 5 minutes or until crispy on the outside and tender on the inside.

Notes

*Instead of Cajun seasoning you can use your favorite all purpose seasoning blend.
Your cooking time will vary based on how thick you cut your potatoes as well as how crowded your air fryer basket is.
