Ingredients
  

  • 3 medium size zucchini
  • 1 pound Italian sausage browned and grease drained
  • 1 cup marinara If keto, use low-carb option such as Rao's
  • 1/2 cup shredded parmesan
  • 1 cup shredded mozzarella

Instructions
 

  • Slice the zucchini length-wise. Then, use a small spoon to remove the center of the zucchini to form a groove, making the zucchini a "boat."
  • Preheat the air fryer to 390 degrees.
  • Place the hollowed-out zucchini in the air fryer and cook 3-5 minutes. This will vary based on the size, but cook until the zucchini begins to blister.
  • Meanwhile, combine the cooked Italian sausage, marinara sauce, and parmesan cheese in a medium-sized bowl.
  • Remove the blistered zucchini from the air fryer. Spoon this mixture into the zucchini boats and top with mozzarella cheese.
  • Place the zucchini boats back into the air fryer and cook for another 4 minutes.

Notes

Depending on the size of your air fryer, you may need to make these in 2 batches.
To cook in the oven preheat the oven to 350 degrees F. Hollow the zucchini and add the filling (you skip the precooking step in the oven method) top with mozzarella cheese and bake 25-30 minutes until the zucchini is tender and the cheese is melted.
