Ingredients

  • 1 large cucumber thinly sliced
  • 1 (15 ounce) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes quartered
  • 2 tablespoons olives sliced
  • 1/2 cup crumbled Feta cheese
  • 1/8 cup olive oil
  • 2 teaspoons lemon juice
  • 1 clove of garlic minced
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  • In a jar with a screw top combine the olive oil, lemon juice, garlic and Italian seasoning. Shake until the ingredients are combined.
  • Add the cucumber, chickpeas, tomatoes, olives and feta in a bowl. Pour the dressing over and toss to coat. Add salt and pepper to taste.
