Creamy, cheesy, carb-y casseroles are my ultimate comfort food. I absolutely can not resist a cheese packed dish that is complete with a heavy carbohydrate base of rice, potatoes, or pasta then piled high with vegetables and protein all mixed together in one pan. Unfortunately, that is not a great meal to have every night, and if you are on a keto diet that is not something you get to have at all.

Think of this creamy chicken casserole as the skinner version of your favorite comfort food casserole.

It is lightened up with cauliflower rice which adds more nutrients to your meal than rice would. The nutrients continue to pile on with the steamed broccoli and grilled chicken. And this casserole is made complete with the creamy greek yogurt, cream cheese, cheddar cheese goodness. Cheesy Keto Chicken and Rice Casserole Ingredients

This cheesy low-carb casserole is loaded with chicken, vegetables and lots of flavor!

  • Fage 2% Greek Yogurt
  • almond milk
  • chicken
  • salt + pepper
  • curry powder
  • garlic
  • parsley
  • lemon juice

How to make Keto Cheesy Chicken and Broccoli Casserole with Cauliflower Rice

This casserole takes about 40-50 minutes to make, 30 minutes of that being completely hands-off, and it can all be made in one big oven-safe skillet! It doesn’t get much better than that, does it?!

To start, get a large skillet and cook your onions in a little bit of oil on high heat. Once the onions are cooked and translucent, add your cauliflower rice, salt, and pepper to the pan. Cook the rice about 10-15 minutes, until the rice is tender and ALL the water has cooked out. Cooking all of the water out is important here otherwise your casserole could end up soggy. Add the minced garlic and cook everything for two more minutes.

Next, the milk, garlic powder, curry powder, parsley, lemon juice, cream cheese, and Greek yogurt will be added. And lastly, the steamed broccoli and cooked chopped chicken is added. Once your casserole is all mixed together just top it with some cheese and foil and let the oven do the rest!

Keto Cheesy Chicken and Broccoli Casserole with Cauliflower Rice

Ingredients 

  • 1/2 cup chopped onion
  • 2 (10 ounce) packages frozen cauliflower rice
  • 2 tsp salt
  • 1/4 tsp pepper
  • 3 cloves garlic, minced
  • 1 cup unsweetened almond milk
  • 1 tsp garlic powder
  • 1 tsp parsley
  • 1/2 tsp curry powder
  • 1 tablespoon lemon juice
  • 3 oz cream cheese
  • 3/4 cup Fage 2% Greek yogurt
  • 1 (12 ounces) frozen broccoli, steamed
  • 4 cups chopped cooked chicken
  • 1 1/2 cups shredded cheddar cheese

Instructions 

  • 1. Preheat the oven to 350 degrees F
  • 2. Heat a large ovenproof skillet to high heat, add the onions and cook for 2-3 minutes until translucent and fragrant
  • 3. Add cauliflower rice, salt, and pepper and cook another 10-15 minutes, until rice is tender and all the water is gone. Once the water has all cooked out, add minced garlic, stir and cook another 2 minutes, until fragrant
  • 4. Turn the heat down to medium and add milk, garlic powder, curry powder, lemon juice, cream cheese, and greek yogurt. Combine everything very well.
  • 5. Oven-Safe Skillet: Add the steamed broccoli and cooked chopped chicken to the skillet and combine again. Top with cheese and cover skillet with foil. Bake covered for 20 minutes, then bake uncovered for 10 minutes.
  • 6. Casserole Dish: Combine steamed broccoli, cooked chopped chicken, and everything in the skillet in an oven-safe casserole dish. Once well combined, top with cheese and cover dish with foil. Bake covered for 20 minutes, then bake uncovered for 10 minutes.
