These amazing Air Fryer Cookies are ready in about 10 minutes and a grain-free, sugar-free, and keto friendly! Enjoy 2 single serving cookies or one large deep-dish cookie for the perfect late night or after school snack.

Servings: 1 large deep-dish cookie or 2 single serving cookies
- 2 tablespoons smooth peanut butter
- 2 tablespoons golden monk fruit or brown sugar if not keto
- 1 egg yolk
- 1/8 teaspoon baking powder
- 1/4 teaspoon vanilla
- 1-2 tablespoons Lily's sugar free salted caramel chocolate chips
Preheat air fryer to 300 degrees for 3 minutes. In a bowl, combine all of your ingredients until a thick dough forms.
For a large deep dish cookie (6.8 net carbs total), press this entire mixture into an oiled or buttered oven-safe ramekin. For 2 single-serving cookies (3.4 net carbs each), split the mixture in half and press into two oiled/buttered oven-safe ramekins.
Cook cookie(s) until just browned on top and nearly set in the middle. For me, this was 6 minutes for single-serving cookies and 10 minutes for the deep dish cookie.
Allow to sit for 5 minutes before serving. Top with sugar-free ice cream for a special cookie sundae!
