Air Fryer Cookies (gluten free + keto)

Ingredients

  • 2 tablespoons smooth peanut butter
  • 2 tablespoons golden monk fruit or brown sugar if not keto
  • 1 egg yolk
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon vanilla
  • 1-2 tablespoons Lily's sugar free salted caramel chocolate chips

Instructions

  • Preheat air fryer to 300 degrees for 3 minutes. In a bowl, combine all of your ingredients until a thick dough forms.
  • For a large deep dish cookie (6.8 net carbs total), press this entire mixture into an oiled or buttered oven-safe ramekin. For 2 single-serving cookies (3.4 net carbs each), split the mixture in half and press into two oiled/buttered oven-safe ramekins.
  • Cook cookie(s) until just browned on top and nearly set in the middle. For me, this was 6 minutes for single-serving cookies and 10 minutes for the deep dish cookie.
  • Allow to sit for 5 minutes before serving. Top with sugar-free ice cream
    for a special cookie sundae!
