If you're carving pumpkins but don't want to roast the seeds immediately, just store them in the fridge for a few days until you're ready!
IWhile washing off the seeds, use your hands to separate the seeds from the strings and pumpkin fibers.
Bring salted water to a boil, then boil seeds 5-10 minutes. Remove and dry between two towels.
Add spices and oil, then roast for 15-25 minutes
